🌞 Overnight Summer Glow Chia Pudding 🌴✨

Make a few jars tonight and wake up to pure grab-and-go goodness all week!

🥥 Ingredients (per jar):
1 cup coconut milk
2 tbsp chia seeds
1 tbsp pumpkin seeds
1 tbsp flax seeds
1 tsp honey
A pinch of cinnamon
Toppings: blueberries + coconut flakes

✨ How to Make It:
Add coconut milk, chia seeds, flax, pumpkin seeds, honey, and cinnamon to a jar.
Stir well, rest 5 minutes, stir again (bye clumps 👋).

“The Bean There, Baked That” Chocolate Cupcakes
High in fibre. Packed with protein.

Totally fudgy and delicious, and no one will even guess they have kidney beans as the base!
I tricked my kids for years..

✨ Ingredients
1 can kidney beans (approx. 400g), drained + rinsed
1 tbsp water or brewed coffee
1 tsp vanilla extract
¾ cup (70g) cacao powder
½ tsp baking powder
½ tsp bicarb soda
¼ tsp salt
½ cup (100g) butter, melted
6 eggs
½ cup (100g) coconut sugar

🧁 Method
1. Preheat oven to 180°C (350°F) and line a 12-hole muffin tin with cupcake cases.
2. In a blender, combine kidney beans, water (or coffee), and vanilla. Blend until smooth.
3. Add eggs, melted butter, and coconut sugar, blend again.
4. Add cacao, baking powder, bicarb, and salt. Mix until just combined.
5. Spoon evenly into cupcake cases (about ¾ full).
6. Bake for 18–20 minutes, or until a skewer comes out clean.
7. Let them cool, and enjoy.

These chocolate oat cups are the kind of treat you can feel good about, no refined sugar, no baking, and no post-snack energy slump. They're soft, fudgy, and made with simple wholefood ingredients that fuel you (and your little ones) gently and sustainably.
✨ Perfect for: After-school bites Lunchbox extras Grown-up tea breaks (because yes, you need one too)

You’ll Need:

For the Oaty Base:
2 cups GLUTEN FREE rolled oats
1/3 cup coconut oil, melted
3 tbsp maple syrup or honey
Pinch of salt

For the Chocolate Topping:
1/2 cup coconut oil, melted
1/4 cup cacao powder
3 Tbls maple syrup or honey
2 Tbls nut butter

👩🏽‍🍳 To Make:
1. Mix the base ingredients in a bowl until everything is well coated and sticky.
2. Spoon lined cupcake moulds pressing down firmly to create an even base layer.(Keep little bit of the oat mixture to pop on top of the chocolate)
3. Pop into the fridge to firm up while you make the chocolate top.
4. Mix together all the chocolate topping ingredients until smooth and glossy.
5. Pour over each oat base, letting it spread to the edges.
6. Sprinkle with remainder oat mixture for a cute, wholesome finish.
7. Chill until set (about 1–2 hours), then pop out and store in the fridge.

These keep beautifully in the fridge for up to a week (if they last that long).
Soft, satisfying, and just sweet enough, without the crash.

🌮Blooming Good Steak Tacos

My God I am obsessed with these at the moment!
So good to up your iron levels and good fats 💪🏼

Ingredients
For the Steak Marinade:
500 g grass-fed fillet steak
2 tbsp olive oil
Juice of 1 lime
2 garlic cloves, minced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp chilli flakes (optional, for spice)
Sea salt + black pepper

🥑 For the Avocado Salsa:
2 ripe avocados, diced
1 small red onion, finely diced
1 tomato, diced
Juice of 1 lime
2 tbsp fresh coriander, chopped
Pinch of sea salt and pepper

For the Greek Yogurt Wraps (makes 6–8):
2 cup gluten-free flour
2 cup plain Greek yogurt
Pinch of sea salt
1–2 tbsp water (as needed for dough)

👩‍🍳 Method
Wraps:
1. In a bowl, mix the flour, Greek yogurt, baking powder, and salt until a dough forms. Add water gradually if needed.
2. Divide into 6–8 balls and roll out thinly on a floured surface.
3. Heat a non-stick pan over medium heat. Cook each wrap for 1–2 minutes per side until golden spots appear.
Keep warm under a clean tea towel.

Steak:
1. Whisk marinade ingredients together. Coat fillet steak and let it marinate for at least 30 mins. (Or overnight if you can)
2. Preheat grill or pan to high heat. Cook steak for 3–4 mins per side for medium-rare (adjust to your liking).
3. Rest for 5 mins, then slice thinly against the grain.

Salsa:
1. Mix avocado, onion, tomato, lime juice, coriander, and salt in a bowl. Keep chunky for texture.

Assemble Tacos:
1. Layer slices of juicy fillet steak on the warm wraps.
2. Top with avocado salsa.

I nearly got caught out today while shopping! I’ve been telling all my trusty nutrition clients to grab tamari as a healthier alternative to soy sauce, gluten-free, naturally fermented, cleaner ingredients… right?

🍋 Healthy Lemon Cake with Yogurt Lemon Icing 🍋

You can have your cake and eat it too (I think that's the saying??) Correct me if I'm wrong 😑

✨ Cake Ingredients:
2 cups almond flour
½ cup Greek yogurt
3 large eggs
⅓ cup maple syrup or honey
Zest of 2 lemons
Juice of 1 lemon (about 2 tbsp)
1 tsp vanilla extract
1 tsp baking powder
Tbls poppy seeds
Pinch of sea salt

🧁 Yogurt Lemon Icing:
½ cup Greek yogurt
2 tbsp lemon juice
1–2 tbsp maple syrup or honey (to taste)
Optional: 1–2 tsp arrowroot powder or coconut flour to thicken

👩‍🍳 Instructions:
1. Preheat oven to 170°C. Line a loaf tin or round cake tin with baking paper.
2. In a large bowl, whisk together eggs, yogurt, maple syrup, lemon zest, lemon juice, and vanilla until smooth.
3. Add almond flour, poppy seeds, baking powder, and salt. Mix until fully combined.
4. Pour into the prepared tin and smooth the top.
5. Bake for 30–35 minutes, or until golden and a skewer comes out clean.
6. Cool in the tin for 10 mins, then transfer to a wire rack.

🍋 Make the Icing:
1. Mix together yogurt, lemon juice, and sweetener.
2. If too runny, stir in a little arrowroot or coconut flour to thicken.
3. Once the cake is fully cooled, spread the icing on top.
4. Garnish with extra lemon zest

💡 Tips:
Make it dairy-free by using coconut yogurt.
Add poppy seeds to the icing for a lemon-poppy twist.
Keeps in the fridge for up to 5 days
Try and go organic when you can.
